Characteristics
This is one of the leanest parts of a pig. As such, it is an excellent source of high-quality protein and it supplies a great deal of vitamins and minerals, which makes it extremely beneficial to the health. All of this, in addition to its scarcity of fat, grants it a great flavour, making it a special piece with a variety of ways it can be cooked.
