SLOW-COOKED PORK SECRETO/DEWLAP WITH ROSEMARY OIL

Ingrédients

2 pork secreto/dewlap
Mixed vegetables to taste
1 large onion
Olive oil (flavoured with rosemary leaves)
1 large glass of white wine
Salt
Garlic powder
Oregano
Thyme
Provençal herbs

Élaboration

Preheat the oven to 90°C from above and below.
While the oven is warming, peel, wash and cut the vegetables. Arrange on the baking tray and season to taste with the oil and herbs.
Now season the secreto/dewlap on both sides like the vegetables. Place on top of the vegetables and pour over the large glass of wine.
Put in the oven at a medium height and cook for about 40-50 minutes, depending on your oven. Check throughout the cooking time and adjust timings according to how well you like your meat cooked.
When ready, plate up and savour this delicious meat.
